- HAY, CITRUS, HERBAL -
A vibrant straw-colored farmhouse ale with a snappy hop character. Notes of baked bread, hay and a mild mineral quality. The grist includes Admiral Pils and Feldblume malts and spicy Saaz and Aramis hops. For a small beer, it is both complex and supremely drinkable. Lively carbonation and bone dry. “Bang straws” were the names of those who threshed grain before the days of mechanization.
FARMHOUSE ALE W/ BLACKBERRY HONEY & BASIL

- HERBAL, EARTHY, FLORAL -
A crisp, straw-colored farmhouse ale brewed with Artisan California Malt from Admiral Maltings, raw blackberry honey from Massey, and fresh basil. Aroma is herbal (basil-forward), with scone-like malt and soft yeast spice. This saison is a touch earthy, with floral, fruity, with hints of mint. The honey shows subtly mid-palate and its pleasant perceived sweetness is balanced by a dry finish.

- GOOSEBERRY, ELDERFLOWER, LEMON -
A deep straw colored saison brewed with Pilsner and Munich malts, along with wheat and oats. Aroma is hop forward, with notes of white wine, gooseberry, citrus and hint of strawberry. Mostly Saaz and Hallertau Blanc on the hot side, and dry hopped with a considerable burst of Hallertau Blanc. This beer drinks like smooth and medium- bodied, with a relatively clean yeast profile. Medium carbonation, finishing dry.

- OLD WORLD, RUSTIC, PEAR -
A pale gold saison, brewed to be Old World in style. Notes of hay, bready malts, ripe pear and spicy hops(Saaz and Aramis). It is medium bodied, with low bitterness and subtle peppery phenols. This rustic farmhouse beer is brewed with balance and meant to be food friendly and dry. “Hayshaker” was an Old West term for a farmer.
DARK FARMHOUSE ALE

- GRAHAM CRACKER, CHERRY, GINGER BREAD -
A sturdy, deep copper farmhouse ale fermented in our American Oak foeder with Saccharomyces Brux Trois yeast. Dark fruits (cherries) on the aroma, followed by malt driven flavors of graham cracker, ginger bread, and chocolate. Balanced with spicy Saaz hops, it is medium bodied and dry with moderate bitterness.

- PASSIONFRUIT, GRAPEFRUIT, RESINOUS -
A raw, unfiltered IPA, pale gold in color. Brewed with 2 Row, Pilsner, and Wheat. It is medium bodied and heavily hopped with over 2.5 lbs per barrel of Simcoe, Citra, and accented with Mosaic for hints of tropical and citrus flavors. Crisp and dry with moderate hop bitterness and medium carbonation. A “bait ball” is a swarm of fish, leading to a feeding frenzy for larger fish and fishermen alike.
OYSTER DRY STOUT

- ROASTY, COFFEE, BRINE -
A roasty, medium bodied black ale with sublte brine character from the addition to the boil of fresh oysters. This dry stout expresses notes of bitter chocolate, coffee grounds, and has a creamy mouthfeel and tan head from the use of flaked barley. Moderate carbonation, balanced bitterness and a dry smooth
finish. Warning: shellfish allergy
IMPERIAL FARMHOUSE STOUT

- DARK CHOCOALTE, CHERRIES, COFFEE -
An Imperial Stout, brewed with a farmhouse yeast and fermented in our oak foeder. It is black, with red fruit and raisin yeast esters, like chocolate covered cherries. There is a hint of coffee roast, but it is not very bitter. Light on the palate for its size, with the booze well hidden. There is a nuttyness and light herbal quality, like from the wood. Perceived sweetness from the fruity character but overall, very balanced.
FARMHOUSE ALE (BARREL AGED WITH NECTARINES & BRETTANOMYCES)

- NECTARINES, TART, FUNK -
The base beer was a golden saison, brewed with a farmhouse yeast. It was then co-fermented with a few Brett strains for about a year in Oak barrels. We then added nectarines for a few months for further aging. Tangy nectarines with bright acidity, Brett funk adds complexity and saison character, with hints of oak. Dry, refreshing, and very drinkable. Bottle Conditioned.

- STONEFRUIT, TART, GRAPEFRUIT -
A grisette, fermented in oak barrels for one year with a mixed culture on spent nectarines. We then dry-hopped the beer with Simcoe before conditioning. Lots of bright flavors, including peach and nectarine, with mild acidity and a lively mouthfeel. Slight funk from wild yeast and bacteria, soft oak notes. Dry and refreshing. Named after the historical area of the Balboa Peninsula, and released for our 2 year Anniversary boat party.
