A vibrant straw-colored farmhouse ale with a snappy hop character. Notes of baked bread, hay and a mild mineral quality. The grist includes Admiral Pils and Feldblume malts and spicy Saaz and Aramis hops. For a small beer, it is both complex and supremely drinkable. Lively carbonation and bone dry. “Bang straws” were the names of those who threshed grain before the days of mechanization.
SMALL RYE FARMHOUSE ALE

- SPICY, FRUITY, OAK -
Unfiltered and deep gold in color, this rustic rye farmhouse ale was fermented in our oak foeder with Sacch Brux Trois. The aroma is fruit forward with pear and stonefruit notes. Hints of rye and yeast spice as well. The flavor is also spicy, fruity and presents the Influence of the oak. It is a bone dry beer, and it finishes with oak tannins and refreshing carbonation.

A low-gravity farmhouse ale with floral and citrus hop aroma. It is straw-colored, unfiltered, and lightbodied. Balances cracker and hay from the pilsner malt / wheat with mild bitterness due to the use of Citra, Centennial and Cascade hops. Lively carbonation helps to finish dry with soft spice from the yeast. A dangerously sessionable lawnmower beer. A chickabiddy means a spring chick or “little one”.
CITRUS FARMHOUSE ALE

- ZESTY, COMPLEX, FRUITY -
An amber colored, medium bodied and high gravity farmhouse ale with complex Citrus flavor. We used a unique approach with the addition of over 100lbs of lemons, roasted, dried, pulverized and whirlpooled. With a low bitterness, this beer is balances its size with slight funk and a smooth head and mouthfeel. Named after the top herdsman who lived in the historical Diego Sepulveda Adobe.
WET HOP BELGIAN ALE

- BISCUITY, LEMONGRASS, WOODSY -
With Cashmere hops picked fresh and delivered immediately to the brewery, this pale copper Belgian Ale is fermented in stainless with a Saccharomyces Brux Trois yeast. Biscuit-like and toasty malt character, with a complex but subdued hop profile that is citrus (orange/lemongrass) as well as a touch earthy. Soft yeast spice and phenols are there too. Low bitterness, medium-bodied and dry.

- PASSIONFRUIT, GRAPEFRUIT, RESINOUS -
A raw, unfiltered IPA, pale gold in color. Brewed with 2 Row, Pilsner, and Wheat. It is medium bodied and heavily hopped with over 2.5 lbs per barrel of Simcoe, Citra, and accented with Mosaic for hints of tropical and citrus flavors. Crisp and dry with moderate hop bitterness and medium carbonation. A “bait ball” is a swarm of fish, leading to a feeding frenzy for larger fish and fishermen alike.

- TANGERINE, PAPAYA, VANILLA CAKE -
A fully opaque Hazy IPA, built for those who love a creamsicle style juice bomb. Notes of citrus, tropical pineapple/papaya, and vanilla cake sweetness. A bit of Chinook in the whirlpool followed by a double dry hop of Amarillo, Cascade and Citra hops. Medium bodied with a rocky head, a pillowy mouthfeel and low carbonation. Smooth and refreshing.

- CITRUS ZEST, PINEAPPLE, PINE -
A clear and gold west coast style DIPA brewed with 2 Row and Oats. It is medium bodied and heavily hopped with 5 lbs per barrel of classic WC hops : Columbus, Chinook, Cascade and Simcoe. Aroma of meyer lemon, grapefruit and pineapple. Mixed citrus (kumquat/grapefruit) and pine flavor through the middle of the beer. Assertive (and a touch spicy) but balanced bitterness. Crisp, dry, and sneaky smooth for its size.

- CITRUS, EARTHY PINE, CATTY -
A golden and crystal clear Brut IPA, dry-hopped with 100% Mosaic. Citrus, floral, and earthy pine notes with hints of pleasant “catty” character in both the aroma and flavor. Bitterness is still on low end. Light bodied but not thin...and with high carbonation, making it crisp and dry on the palate.
HAZY PUB ALE

- FRUITY, NUTTY, HERBAL -
A deep gold experimental pub ale, fermented with British ale yeast and heavily dry-hopped with East Kent Goldings. Medium to full body and hazy in appearance, the aroma is fruity and herbal, Biscuit-like and nutty malt presence (2 Row, Golden Promise, Wheat, and Aromatic malts) follows with a finish of earthy and herbal hops. Smooth bitterness and a silky mouthfeel.
FARMHOUSE ALE (BARREL AGED WITH PEACHES & BRETTANOMYCES)

After a year and half in French Oak, this farmhouse ale was co-fermented with various Brettanomyces strains and whole peaches from GB Farms. Bright and fresh peach character, with slight funk, mild acidity, and notes of oak. Bottle Conditioned.
FARMHOUSE ALE (BARREL AGED WITH NECTARINES & BRETTANOMYCES)

- NECTARINES, TART, FUNK -
The base beer was a golden saison, brewed with a farmhouse yeast. It was then co-fermented with a few Brett strains for about a year in Oak barrels. We then added nectarines for a few months for further aging. Tangy nectarines with bright acidity, Brett funk adds complexity and saison character, with hints of oak. Dry, refreshing, and very drinkable. Bottle Conditioned.

- STONEFRUIT, TART, GRAPEFRUIT -
A grisette, fermented in oak barrels for one year with a mixed culture on spent nectarines. We then dry-hopped the beer with Simcoe before conditioning. Lots of bright flavors, including peach and nectarine, with mild acidity and a lively mouthfeel. Slight funk from wild yeast and bacteria, soft oak notes. Dry and refreshing. Named after the historical area of the Balboa Peninsula, and released for our 2 year Anniversary boat party.
HAZY IPA W/ TEA
ABV : 6.2 %
- CITRUS, CASSIS, ELDERFLOWER, TEA -
A pale orange and opaque Hazy IPA to which added a tea blend. 2 Row, Wheat, Oats and Chateau Cara Blond malts provide structure and pillowy mouthfeel. Only a smidgeon of Hallertau Blanc in the WP followed by a double dry hop schedule of Hallertau Blanc and Citra hops. Big fruity notes of citrus and berries, but also floral notes and tea. Silky smooth and medium to full bodied with moderate carbonation.
HAZY PALE ALE
ABV : 5.0 %
- GRAPEFRUIT, LIME, HERBAL PINE -
A smooth, easy drinking Hazy Pale Ale. Coudy and straw-colored, it was built sturdy for the mosh pit. 2 Row, Wheat and Oats add body and mouthfeel, but it is a sessionable hoppy beer, with Simcoe on added hotside, and dry-hopped with equal parts Simcoe, Citra and Amarillo. A collaboration with our friends, Death by Stereo, on the 20th Anniversary of bringing their hardcore punk rock to OC and beyond.
