SGT. GUN. / Dry-hopped saison with basil and fennel/ 4.8% ABV
FRESH HERBS, SPICY, HAY
A pale gold saison brewed with Pilsner and Vienna malt, but is unique for its addition of basil and foraged fennel. The aroma is full of fresh herb, lemon peel, spicy yeast and white pepper, some of which comes from a light dry hop. Mid palate shares herbal and rustic hay notes, with light fruit and a little sweetness
on the finish to what is otherwise a dry beer. A collaboration beer with our amici at Sgt Pepperoni’s Pizza.
old rackatee / farro SAISON w/ amarillo / 5.2% ABV
EARTHY, SMOKE, CITRUS
A hazy, straw colored saison, that highlights a grain bill of Bo Pils, flaked oats, and Farro Verde from Anson Mills. This unique, ancient grain is harvested before dry and fire threshed in its hulls, offering an earthy smokiness. It is balanced by big citrusy Amarillo hops, a light-medium body and dry finish. Fermented with a French Saison yeast.
BAIT BALL / IPA / 6.6% ABV
PASSIONFRUIT, GRAPEFRUIT, RESINOUS
A raw, unfiltered IPA, gold in color. Brewed with Pilsner, 2 Row, Oats and flaked barley. It is medium bodied and heavily hopped with over 2 lbs per barrel of Simcoe, Citra, and accented with Mosaic for hints of tropical and citrus flavor. Dry with assertive hop bitterness.
RODEO FLIP / FARMHOUSE PALE ALE/ 5.3% ABV
PINEAPPLE, OAK, RUSTIC
A cloudy, unfiltered pale that was fermented in our Oak foeder with a wild saccharomyces yeast strain. Light amber in color, it has big tropical fruit aroma (pineapple, mango) and showcases Huell Melon hops. Moderate bitterness, medium bodied and it has lively carbonation with a billowy head. This hop
forward farmhouse hybrid finishes dry and is very sessionable.
MAJORDOMO / CITRUS FARMHOUSE ALE/ 7.5% ABV
ZESTY, COMPLEX, FRUITY
An amber colored, medium bodied and high gravity farmhouse ale with complex Citrus flavor. We used a unique approach with the addition of over 100lbs of lemons, roasted, dried, pulverized and whirlpooled. With a low bitterness, this beer is balances its size with slight funk and a smooth head and mouthfeel. Named after the top herdsman who lived in the historical Diego Sepulveda Adobe.
SAVAGE SEASON / UNFILTERED IPA / 5.3% ABV
ORANGE JUICE, MELON, BERGAMOT TEA
A juicy West Coast-style IPA, pale gold in color with hazy appearance. Brewed with 2 Row, Pilsner and Oats but is dominated by huge citrus aroma. Orange and grapefruit flavors follow with a mid-palate assertive hop bitterness Hopped with Chinook/Motueka in the whirlpool and dry hopped with El Dorado and Amarillo. Light-bodied and has a clean finish.Collaboration with BeerSavage.
DRIP CASTLE / HOPPY BROWN ALE/ 5.0% ABV
DRY COCOA, CARAMEL, COFFEE GROUNDS
Up front this brown ale has big aroma of carmel malts, roastiness, and dry cocoa powder. The color is like dark leather with a light tan head. Citrus and spicy hops (Chinook, Centennial, Columbus) with moderate carbonation brighten what is a pretty full body, and it finishes dry with an assertive and lingering hop bitterness.
COCKCROW / BREAKFAST STOUT WITH THE BRAUHAUS COFFEE / 6.2% ABV
ESPRESSO, DARK CHOCOLATE, DARK FRUIT
This medium bodied black beer leads with an aroma of deep roastiness, dark chocolate and bright coffee. Also hints of roasted nuts and dark fruit. It is chock full of cereal grains (wheat, oats, corn, rice, and barley), has a touch of milk sugar, and then sat on almost 1.75# / BBL of coffee beans (a special roast blend of Ethiopian Kochere & Guatemalan Hunapu by The Brauhaus). Dry and smooth, with balanced Mosaic hop bitterness.
