CRISP, FLORAL, GRASSY
This beer is a straw-colored saison at table strength. The grain bill highlights the use of California Wild Rice (cultivated in “flooded fields”), along with Pilsner malt and white wheat. It is bright and light-bodied, with citrus and floral hop flavor from a healthy dose of Loral hops. Soft yeast from a Saison yeast blend. Low ABV, lively carbonation and a dry finish makes this endlessly drinkable.
KUMQUAT, WHEAT, PITH
Pale gold, light to medium bodied, and unfiltered hazy. Loaded with bright citrus aroma from the use of winter harvest kumquats. This is a small saison at table strength, but it has a moderate bitterness due to the use of citrusy American hops. Also shows typical french Saison Yeast character, as well as citrus / herbal pithyness from the addition. Lively, dry and crisp.
CRISP, FLORAL, DRY
A low-gravity farmhouse ale with floral and mandarin citrus hop aroma. It is straw-colored, unfiltered, and light-bodied. Balances cracker and hay from the pilsner malt / wheat with a Noble hop character (from heavy Saaz dry hopping). Mild bitterness and lively carbonation helps to finish dry with soft spice from the yeast. A dangerously sessionable lawnmower beer.
CITRUS, RUSTIC, SPICE
A hazy and unfiltered pale yellow saison. It is light to medium bodied, with the use of multiple flaked and rolled grains. Aroma of hay and slight spice, followed by a bright citrus flavor, mild hop bitterness and subtle white pepper notes. This balanced and rustic saison is very food friendly and finishes smooth and dry.
ZESTY, COMPLEX, FRUITY
An amber colored, medium bodied and high gravity farmhouse ale with complex Citrus flavor. We used a unique approach with the addition of over 100lbs of lemons, roasted, dried, pulverized and whirlpooled. With a low bitterness, this beer is balances its size with slight funk and a smooth head and mouthfeel. Named after the top herdsman who lived in the historical
Diego Sepulveda Adobe.
PASSIONFRUIT, GRAPEFRUIT, RESINOUS
A raw, unfiltered IPA, gold in color. Brewed with Pilsner, 2 Row, Oats and flaked barley. It is medium bodied and heavily hopped with over 2 lbs per barrel of Simcoe, Citra, and accented with Mosaic for hints of tropical and citrus flavor. Dry with assertive hop bitterness.
CREAMY, MEYER LEMON, HERBAL
Straw colored and opaque Citra-hopped session beer with a tall moussy head. It is hazy due to being unfiltered, and shows a big aroma of sweet citrus. The body is low to medium and has a smooth creaminess with honey sweet malt notes. It finishes dry with a lingering herbal hop bitterness. Built for summer, and it is an easy drinker with a high crushability factor.
MANGO, PAPAYA, YEAST, SPICE
Unfiltered and hazy, this pale orange colored IPA has a big aroma of papaya, funky yeast, and spicy hops. Bready malts and tangy mango esters along with a medium body make it very juicy. Big hop flavor from a medley of Chinook, Simcoe, Amarillo, and Mosaic hops, it has assertive bitterness and a long but dry finish. A fun hybrid beer...the name means (to be bucked from a horse).
CITRUS, HERBAL, RESINOUS
A gold-colored West Coast IPA, with assertive hop bitterness balanced with mild toasty malts (2 Row and a touch of Rye). The aroma is citrus and stonefruit forward, balanced with herbal and pungent hops (Citra, Chinook, Columbus and Mosaic). Medium bodied, clear, and moderate carbonation, this hoppy beer finishes clean and on the dry side.
ETHIOPIA - SIDAMO - GIGESA
We were able to increase our extraction and really bring out the sweetness in this Ethiopian bursting with caramel, orange, and floral notes.
The Makrut Mojito is concocted by muddling fresh, locally-grown Kaffir lime leaves (bai makrut), Thai basil, mint, and lots of lime juice into a sencha green tea kombucha to create an ultra-fresh, herbaceous, fragrant, tangy booch that’s the perfect summer sipper.
Our brand will be anchored by a taproom that is a place that not just offers better beer product, but an environment that strives to nurture meaningful interaction and ideas. Instead of adding to the noise, we will promote collaboration, constructive discourse, and transparency, with hopes to bring along the community on our beer making adventure. Our taproom has a large outdoor patio, and is dog friendly and family friendly.
Once we are open, we hope you will visit to taste our beer and take beer-to-go. We will be programming food trucks, and you will be able to bring food on-site. We brew small-batch artisan ales, 10 BBL at a time. We have a small brewing system on site (the same one Dogfish Head started its brewpub on), as well as do off-site wort production in order to be agile and experimental. We ferment, age and blend all beer on our facility. Gunwhale has a wooden foudre and temperature-controlled barrel room, with a growing supply of oak barrels for which we will develop more complex farmhouse, wild, and sour beers. Our taproom is positioned in the center of Orange County, CA. We are located in Costa Mesa, in what is known as the SoBECA District. We are near quality food and beverage, as well as cultural, art, and shopping activities.
Parking is available in our lot as well as on Randolph Ave. We promote a fun time, but also responsible consumption. Consider taking an Uber or riding your bike!
Gunwhale Ales will foster a community and a culture. We mean this in the same way that food, music, art, and design are created, by the artisan and shared with the masses.
We hope we can do our part in affecting the culture around food and beverage, in raising the bar for sustainable and premium quality and in responsible consumption. Gunwhale Ales is an authentic and passionate project that will transfer outwards from our tasting room, to all the campfires, taverns and living rooms where our beer will be enjoyed.
